XO (Extra Old) designates a minimum maturation period of ten years in oak. St Remy XO is blended from selected aged eaux-de-vie and bottled at 40% ABV. The extended oak maturation contributes greater depth, complexity and structural refinement compared to the VSOP expression. On the nose, richer aromas of dried fruit, toasted wood, vanilla and dark spice develop. The palate is smooth and fuller-bodied than the VSOP, with more pronounced oak character, dried apricot and warming spice. The finish is of medium to long length, well-defined and complex.
